Collesano's reference dairy, on the main road into town. The Dispenza family has bred animals and made cheese here since the early 1900s — a tradition founded by the grandfather, Illuminato, known to everyone as “Luminatu”, whose recipes are still passed from father to son. The name is a play on words: dispensa, the country pantry of good preserved things, became the family surname Dispenza and then the name of the modern shop, “La Dispenza del Nonno” — the grandfather's pantry. The flock grazes the wild-herb pastures of the Madonie, and the counter is known above all for Provola delle Madonie and a semi-aged cow's-milk Caciocavallo “Collesano”, alongside fresh tuma, primosale, ricotta and aged cheeses.
